Today was Foodie Friday number 21! While trying to choose which recipe to make this week, I rummaged through my fridge to discover we had carrots. The problem was that there wasn’t enough carrots to make muffins or cake with. That left making them into a side dish for dinner my only option. I personally much prefer roasted carrots to raw. The flavour and texture is so much more enjoyable to me.
These Asiago Garlic Carrots are no exception to that personal preference. The subtle garlic flavour mixes wonderfully with the soft, yet crisp carrots. Then, all of that is deliciously topped with asiago cheese.
